Recently we had this amazing IKURA experience and we took the opportunity to have this one to one small interview with its talented owner Jesus Diaz, who has been in the restaurant business for over 13 years and he gave us a little more information about the fusion concept of his restaurant.

Q: How is IKURA different from other restaurants?

At ‘Ikura’ our concept is fusion. Our sushi is not just the traditional raw fish with rice and soy sauce; we mix the Japanese cuisine with Caribbean flavors. 

Q: What the motto/mission of your restaurant?

Motto of ‘Ikura’ is to offer a change and to get everyone to try and enjoy our fusion concept.

Q: Any specific/popular dishes that you specialize in?

Crunchy Crab Salad ( Kanikama Crunch ) is the house favourite.

Q: How often do you change your menu?

Always, creating new dishes is passion of mine.

Q: Do you peruse food reviews and review sites such as Yelp?

Yes, very into reviews (4 stars in Yelp)

Q:  In today’s economy what is the most difficult aspect of the running a successful restaurant? 

Provide the best quality (cost) and be price competitive (competence)

Q:  What advice can you give to those who would like to open a restaurant of their own someday? How can they get from Point A(thinking about an education) to Point B (being a restaurant owner) 

Learn and be willing to do EVERYTHING at your business. Location is the key.
